How to block dates using the Check Availability widget on the Hotel Booking page

I’m trying to block certain dates on the calendar that is used for the Hotel Booking page.
The page I am using is here:
http://www.staging.halemahinacondo.com/hotel-search/
The Check Availability button will produce a price estimate and confirm availability, but I don’t know how to block dates that are not available.
Is there some documentation on how to do this?
