specific adjustments in the template

Hello,
the fields to assign country, year, quality…etc dissapeared from the post entries and I don’t know how to get them back. I went through the user manual but unfortunately this document is rather basic and incomplete covering also the basic configuration of the theme.
I require also to assign special icons (like stars) to some of the posts featured in the home page such as “popular”, “trending”, and new but again I don’t find where in the template you can do that
Could you please help me with that?
