Weather Info, Top Contact Info and Different Guest Category

Hi,
Where can I remove the wether info or change the location to Nicosia in Cyprus ? Also I want to change the contact info on the top header. Could not find any menu about these two options.
I have another important problem with guest types/categories. I want guest types to be selected such as Adult and Children? Could not find any options this as well.
