SOS: How to add more payment gateways (and some more vital questions)

Please help me with the following issues:
1) Can I add more payment gateways in the theme? For example, could I have the bank transfer option? Or could I use the WooCommerce (and it’s payment gateways) for the booking transactions?
2) Is there a way not to select the number of children and (of course) to hide it entirely from the front end, as also from the checkout process?
3) Let’s say that I have a room with a price at 100€, and VAT 20%. I would like to add the prices with the option “Price including tax” enabled and also on the front end show the final prive (100) including the Tax. Otherwise the price is shown as 80€ which is a bit confusing…
4) On the sidebar there is a button “BOOK NOW” which I guess is supposed to select the room that I a viewing at the current moment, but it doesn’t seem to work at all. I think that it should open a js popup with date selector, but in my case it simply doesn’t work:

5) The transactional emails are written in English. Is there a way to send email in different languages in a multilingual site?
